What Kayak Should I Buy?

HI Guys. I am in the wantabe stage right now and I sure could use some advice. I know--I need to try stuff out, and I will, but those of you who have been doing this for years could save me a lot of time if you'll help me out a little. Our winter weather up here is in the 50's with light to heavy rain a lot of the time. I plan on fishing the lakes, slower parts of the rivers, and estuaries in Nor/Cal--Southeren Oregon. I may get into the Ocean at some point later on. What are some good bets on fishing kayaks for this type of usage? Would you recommend an open yak wearing a wetsuit, or a more enclosed one? I'm 6'1, 210 lbs., and have been a competetive cyclist for years. Are the ones with the pedal systems really any good? And finally--what are you using and why? Thanks
