: Ted's advice is solid. Really you'll have to get in some boats to decide, and even after you purchase one, after some time you'll probably feel the need to get another model. For water that cold you might also consider a drysuit with some nice warm fleece underlayers. To keep your butt out of the water, look for a good seat (not just a backband) that has some insulating properties, any quality foam seat will probably work, but I've heard good things about Surf to summit products. The sit-inside boat is a good option, but you'll need a really stable model and you'll HAVE to have an eskimo roll down pat.
Myself I paddle a few different boats (I work for a kayak shop off & on) including OK scupper pro & WS Ride, but mostly an old dagger cayman with a seat pad. Water here in Central cal is usually in the high 50's low 60's in summer, and I wear 4mm wet suit pants to paddle in. The seat pad I use is a stick-on neoprene type by Padz and is about 1/4" thick.
