Jim, do you think the difference is significant?  Someone from the East Coast just told me about how differently they kayak fish then we do.  Almost to imply that we are too much of a "niche" to be of benefit to their way of kayak fishing.  In regards to the Gulf and the Ocean, I think the real difference is going to be more in the types of tackle than anything else.  How different is the kayak rigging?  I've been visiting and talking with guys from the Gulf for 2 years now.  I don't see a difference really.  We use SOTs, we like sonar, we like rod holders, we like navigational aids (btw, thanks for the nav tips).  The only distinction I really see is a local knowledge of the bite and marine conditions.  Sure we have big surf once in a while, but most people avoid it, as they should.  Many people use marinas and harbors to launch as well.  As far as freshwater goes, if you can kayak fish in more extreme elements like the ocean, you're going to find freshwater very easy.  Though fishing tactics are quite different.  Rigging, safety and skill can all be applied.  What could be a dramatic change would be for someone to go from lake fishing to ocean fishing.

The kayak pictures of the various rigged cobras someone left was probably the best batch of "rigged kayak" photos I've seen. You're not going to find that on Ocean Kayak Fishing (except the message board just now) or Texaskayakfisherman. Though I do have a bunch of pictures to be added to our rigged kayaks section.
