I chartered out of the Mosguito Lagoon area last year and had a ball catching redfish and trout. Its perfect water for a kayak and I really envy your location.

Only disadvantage for kayak is its self powered and you are probably going to have a hard time installing the poling platform (LOL). Since the guide hooked more fish dragging a shrimp around behind the boat than we did sight casting jigs I think I could live without the height a flats boat gives you.

Seems like I saw area in the state park around sebastion inlet that rented them. Sure there are dealers around just make sure you try several before you purchase (and dont let glowing reports from others make you skip that step).
