I've used and owned both. The big question is where are you going to fish? How far of a paddle to you have to get to your fishing grounds? I had the Pro Ex and while I like some features of this kayak, I ultimately traded it in and got an extreme. The Number one reason I did that was because the area I fish most often is a one way 3 mile paddle. The extreme was a better fit for that.
As for the out of the water issues, you will need to get a cart for this kayak and get a good one. Loading the extreme on top of my car has not been a problem for me, but there are days I wish it was as light as the Pro E. Like all kayaks, you have to find your routine. And it sounds like you already have a plan of attack there.
good luck and ask the malibu guys if they have a customer in your area that will let you try their kayak. I have heard of that happening before.
