1)I would not use the hatches for that purpose.Most people use a bucket in the rear of the kayak and rig it with a small pump.2) Towing a bait bucket will create drag and may prove awkward. Sharks are not prone to any one place so there is really no answer. but if you have a stringer of fish you might want to have a long leader on it for the fish and a bouy so you could cut it free and to help prevent a snag on something when kayaking. or just carry the fish in the kayak; a malibu is large enough for that.
