lings and reds questions

I've never tried fishing for these but would like to give it a try, the Yellowtail and WSB have been quite and the calico's have been fun lately but I'm ready to try something different. How do you fish for these off a yak and can you target them off the Orange County coast or do I need to go somewhere else.
