There might not be one kayak that is the best. Though there are a bunch of good ones. If you go with Cobra, I'm sure you would have a few models to choose from that would work out for you just fine. As well, Ocean Kayak has a bunch of models to choose from. Wilderness systems makes a couple of good yaks too. As long as you get the one that is stable enough to fish from, but easy enough to transport, you should be OK. Some are better for rough waters and surf re entry.
I've heard from some critics that the Cobras durability(plastic) doesn't hold up to that of Ocean Kayaks. Though most Cobra owners seem just as happy as Ocean Kayak owners.
