Both Allen's Kayaks (Ocean Kayaks dealer) and San Diego Sailing Center (Cobra and Hobie) have demo boats to take out on Mission Bay.

At 6-4 and 225, I paddle the SUV of kayaks, the Cobra Fish n Dive. I figure that if you set up a sprint race with a Scupper Pro that the FND is about 10-20% slower; however, it is extremely stable (36" wide) and supports 600 lbs (me, gear, fish). You never hear of a kayak fisherman turning over his FND out in the kelp beds. That is not true for the narrower boats, like the Scupper.

In the Scupper's defense, it is a faster boat that some bigger guys like John Pawlak, aka Eagle Eye, paddle.(though I think the rounded hull adds further to it's ease of rolling). You sit lower in the boat, making for a wet-butt ride. It appears to be lower priced since it comes with it's forward hatch (You buy the hatches seperately on the FND).

Again, my observation.

Bottom line, go paddle some boats, and see what you like
