I've had alot of fun with sit-on-tops and roof racks

I've tried the mako saddles, hully rollers, and kayak tower.

The saddles and rollers only work if the boat's keel down, which makes me nervous on the freeway. Agree that upside-down seems more aerodynamic. I also noticed that, for my Ocean Kayak Aegean, the hull shape made it darn near impossible to position the saddles and rollers in a way that kept the keel from hitting the bar and let me route the straps.

The kayak stacker didn't work either because, when set on its side, the boat was too wide (34") to sit stably next to the tower. Same for my Cobra Tourer (28").

Bottom line; I took all the fancy stuff back. I use Yakima oversized bars with foam pads. The boats, singly or together, sit hull-up on the pads, I strap through the scupper holes, and use roaps to tie bow and stern to the bumper...
