Hey Avery~here is the recipe for The Legend’s world famous ceviche that you wanted:

 cut fresh fish into ½” cubes
 shrimp
 50/50 mix of lime juice and apple vinegar
 salt
 finely chopped ginger
 finely chopped onions
 finely chopped roma tomatoes
 finely chopped jalapeno

I also add a little liquid smoke and cilantro.

Mix the fish and the lemon/vinegar together first and let that stand for 10 minutes. Then add as much of the other ingredients as your taste dictates. It’s ready to eat right away.

I’ve served this dish to over 100 hundred people and no has ever not liked it. Many of the people tell me almost every time they see me how good it was and want to know when I’ll be making it again~john

One more thing this stuff is so GOOD that I'd really like to keep this recipe just between us.
