Malibu Pro Explorer or OK Drifter. Certain tandem models work paddled solo. What's nice about the Drifter is it's easier to get your hands on for a test paddle. I know people that have ordered Malibu Pro's Explorer without trying them out first and were very happy. When you're over 200lbs, the list gets narrowed down a bit. I'm 6'2" 195lb and fit well in both the Drifter and the Pro. I still have good growing room as well.

Trying them out first is a good rule of thumb. Though I don't think you could go wrong with either boat. Btw, if you don't have any equipment either, Malibu Kayaks has a package deal that comes with everything you need to get going (I think $699, another $100 delivered to your door).
