Newbie here-what about bleeding the fish?

Just bought a Kayak at the SD Boat show, haven't even picked it up yet-maybe Tuesday. Anyway, was thinking how good cudda can taste when bleed right away and was wondering about bleeding a fish over the side of the kayak and being right there with all the things that might bring by, like sharks and sea lions- or is that part of the thrill? Any thoughts on catch treatment? (though most of my fishing will be catch and relelase). Thanks
also- will be oiut at the Mission Bay tourny on Sat and look forward to meeting y'all that are going to be there too.
