I think the Fish & Dive and the Pro Explorer would be your best bet out of the 3 you mentioned. I haven't paddled the Fish & Dive, but I regularly paddle the Pro Explorer. It's a new kayak on the market. It's performed very well for me thus far (has a lifetime warranty like Cobra just in case).

Which ever kayak you go with, get one with lots of above and below space/storage. I know that both the Fish & Dive and the Pro Explorer have that. These are not fast kayaks. They are very stable and can hold lots of gear. There are trade offs. The Scupper TW from Ocean Kayak can hold a good amount of gear below and some in the tankwell, but almost nothing on deck. Though it's easier to paddle long distances (once you get use to the narrow, less stable platform). Though Ocean Kayak has addressed this and are soon to release a kayak (early 2003) called the Prowler. The added length of the Prowler will compensate for the "Lunker" width kayakers need if they want deck space.
